- Preheat your oven to 375°F (190°C).
- Rinse the sushi rice until the water runs clear, then cook according to package instructions.
- Mix rice vinegar, sugar, and salt until dissolved, then fold into the fluffed rice.
- Spread the seasoned sushi rice evenly in a baking dish.
- In a bowl, combine diced salmon, mayonnaise, sriracha, sesame oil, and green onions. Mix well.
- Spread the salmon mixture over the rice base evenly.
- Bake for 25-30 minutes until golden and salmon is cooked through.
- Garnish with extra green onions, nori strips, and optional tobiko before serving.
