  • 2 cups Sushi Rice Rinse until water runs clear.
  • 2 cups Water Follow package instructions.
  • 1/4 cup Rice Vinegar Apple cider vinegar can be a substitute.
  • 1 tablespoon Sugar Adjust according to your sweetness preference.
  • 1 teaspoon Salt Use kosher or sea salt.
For the Topping
  • 1 pound Fresh Salmon Fillet Can swap with cooked crab or shrimp.
  • 1/2 cup Mayonnaise Opt for vegan mayo if desired.
  • 3 tablespoons Sriracha Sauce Adjust for spice preference.
  • 1 tablespoon Sesame Oil Can be omitted or replaced.
  • 2 tablespoons Green Onions Chopped, scallions can be used as an alternative.
For the Garnish
  • 2 sheets Nori Can replace with thinly sliced kale or omit.
  • 1/4 cup Tobiko Optional garnish, omit if unavailable.

Method
 

Directions
  1. Preheat your oven to 375°F (190°C).
  2. Rinse the sushi rice until the water runs clear, then cook according to package instructions.
  3. Mix rice vinegar, sugar, and salt until dissolved, then fold into the fluffed rice.
  4. Spread the seasoned sushi rice evenly in a baking dish.
  5. In a bowl, combine diced salmon, mayonnaise, sriracha, sesame oil, and green onions. Mix well.
  6. Spread the salmon mixture over the rice base evenly.
  7. Bake for 25-30 minutes until golden and salmon is cooked through.
  8. Garnish with extra green onions, nori strips, and optional tobiko before serving.
