  • 1 red bell pepper
  • 1 yellow bell pepper
For the Sauce
  • 1/2 cup ketchup base of the sauce
  • 1/4 cup cider vinegar for tanginess
  • 1/4 cup brown sugar for sweetness
  • 1/4 cup soy sauce use gluten-free if needed
  • 1 tablespoon fresh ginger or use ground ginger
  • 2 cloves garlic or garlic powder as substitute
  • 1 cup pineapple pieces can substitute with mango or nectarines

Method
 

Step-by-Step Instructions
  1. In a bowl, combine cornstarch with a pinch of salt and pepper. Toss chicken pieces in the mixture.
  2. Heat about 2-3 tablespoons of vegetable oil in a skillet over medium-high heat. Fry the coated chicken for 4-5 minutes until golden brown.
  3. Add the chopped onion to the skillet and sauté for 2-3 minutes until softened.
  4. Add sliced red and yellow bell peppers to the onions and stir-fry for 3-4 minutes until slightly softened.
  5. In a bowl, whisk together ketchup, cider vinegar, brown sugar, soy sauce, ginger, and garlic.
  6. Pour sauce into the skillet and simmer for 1-2 minutes. Adjust consistency with reserved pineapple juice if needed.
  7. Return the fried chicken to the skillet and gently stir into the sauce and vegetables. Simmer for another 2-3 minutes.
  8. Transfer the Sweet And Sour Chicken onto a serving platter and serve over steamed rice or noodles.
