- Soak the panko breadcrumbs with milk for about 20 minutes.
- Sauté diced red onion in olive oil for 2-3 minutes until soft.
- In a large bowl, combine ground chuck, soaked breadcrumbs, sautéed onions, Worcestershire sauce, salsa, beaten eggs, and ¾ of the spice mix.
- In a saucepan, mix ketchup, cider vinegar, Worcestershire sauce, remaining spices, brown sugar, and guava paste. Simmer for 15-20 minutes.
- Preheat the smoker to 250°F (120°C).
- Spray a loaf pan with cooking spray, add meat mixture, and smooth the top.
- Smoke the meatloaf for 3-4 hours, brushing guava glaze every 30 minutes.
- Let the meatloaf rest for 10-15 minutes before slicing.
